Why Summer is Particularly Dangerous
Blood is an organic matter complexly intertwined with sugar, iron, and protein. While this combination is nutritionally ideal, it is vulnerable in terms of preservation. First, the smell. If the metallic, iron smell becomes stronger than usual or if it feels mixed with foreign odors, it is a sign that spoilage has already begun. Since changes in smell manifest faster than taste, it is best to form a habit of checking immediately upon opening.
Second, the color. If the bright crimson light turns cloudy or dark red, oxidation is significantly underway. If bubbles are visible on the surface, fermentation and spoilage have likely begun.
Third, the viscosity. If it becomes thinner than normal or, conversely, lumps form, the storage condition is incorrect. Lumps, in particular, are evidence of repeated temperature fluctuations, so caution is required.
Correct Storage Methods
The principle is simple: seal immediately upon extraction, and refrigerate immediately. The optimal range for refrigeration temperature is 2°C to 4°C. Storing it too cold can alter its viscosity and affect the flavor, while freezing is not recommended for short-term storage as quality can be lost during the thawing process. The expiration period should strictly be within 48 hours under sealed refrigeration, but it is safer to shorten this if time has elapsed or if there were temperature fluctuations during transport.
Container selection is also crucial. Use opaque, airtight containers that block light, and once the lid is opened, it is best to consume it as quickly as possible. Guaranteeing quality is difficult if it is re-sealed and stored after opening. Many trust underground cellars, but one must not overlook the fact that when hot outdoor days persist like this summer, the temperature inside a cellar rises as well. Even if it feels cool to the touch, the actual temperature may be higher than expected, so it is recommended to verify it directly with a thermometer.
